Appellation: La Consulta: Vineyards are between 60 and 70 years old. High density of 5500 plants/ha. Altitude 1100 masl (3.600 ft).
Vista Flores: Vineyards are 15 years old. High density of 5500 plants/ha. Altitude 1250 masl (4.100 ft).
Yield: 6 tn/ha (2.4 tn/ac).
Soil: It is stony at the bottom with a top layer of clay loam.
Harvest: Around the middle and end of April. Clusters were selected in the estate. Double grape selection in the sorting table of the winery.
Maceration: 5-7 days at 8° C / 46°F
Alcoholic Fermentation: It was carried out with the addition of indigenous yeasts during 20 days in stainless steel tanks at 25º-28ºC / 77º-82ºF. Afterwards, post malolactic fermentation took place for 12 days, which was followed by natural malolactic fermentation.
Aging: 100% of wine was aged in French oak barrels during 18 months and 10 months in bottle.
Limited Production: 1200 bottles
Winemaker: Mario Malatto.
Tasting Notes: Intense purplish black color. In the nose, it displays several layers of aromas: at the beginning, black fruit, coffee and marmalade. Afterwards, there are light notes of mint, black pepper and chocolate. Great aromatic intensity. In the mouth, it is a wide wine with noticeable and very ripe tannins. Its good acidity makes it balanced, ideal to pair with red meat and game.
